     Red Velvet Cupcakes

Ingredients
2 1/4 cups all-purpose flour
1 teaspoon salt
2 bottles (1 oz each) red food coloring
3 tablespoons unsweetened cocoa powder
1 cup buttermilk
1 teaspoon vanilla
1 1/2 cups sugar
1/2 cup (1 stick) butter, softened
2 eggs
 
1 teaspoon white vinegar
1 teaspoon baking soda
1 to 2 containers (16 oz each) whipped cream cheese frosting

Instructions
1) Preheat oven to 350F. Line 18 standard (2 1/2-inch) muffin cups with paper baking cups.
2)Combine flour and salt in medium bowl; mix well. Gradually stir food coloring into cocoa in small bowl until smooth and well blended. Combine buttermilk and vanilla in another small bowl.
3)Beat sugar and butter in large bowl with electric mixer at medium speed for 4 minutes or until light and fluffy. Add eggs, one at a time, beating well after each addition. Add coca mix; beat until well blended and uniform in color. Alternately add flour mix and buttermilk mix, beating well after each addition. Stir vinegar into baking soda in small bowl; gently stir into batter with spatula or spoon (do not use mixer). Spoon evenly into prepared muffin cups.
4) Bake 20 minutes or until toothpick inserted into centers comes out clean. Cool in pan 10 minutes. Remove to wire racks; cool completely. 5) Frost cupcakes.
