     Banana Cream Pie Cupcakes

Ingredients
1 package (about 18 oz) yellow cake mix, plus ingredients to prepare mix
2 cups milk
1 package (4-serving) banana pudding mix
2 bananas
2 tablespoons granulated sugar, divided
2 cups whipping cream
 

Instructions
1) Preheat oven to 350 F. Line 24 standard (2 1/2-inch) muffin cups with paper baking cups. 2) Prepare cake mix according to package directions. Spoon evenly into prepared muffin cups. 3) Bake 20 minutes or until toothpick inserted into centers comes out clean. Cool in pan 10 minutes. Remove to wire rack; cool completely.
4) Meanwhile, whisk milk and pudding mix in medium bowl for 2 minutes. Cover and refrigerate until set.
5) Preheat broiler. Line baking sheet with parchment paper. Cut each banana into 12 slices. Place 1 tablespoon sugar into shallow bowl. Dip one side each of banana slice into sugar; place on prepared baking sheet, sugar side up. Broil 2minutes or until golden brown. Cool completely.
6) Beat cream and remaining 1 tablespoon sugar in large bowl at medium-high speed until stiff peaks form. 7) Cut 1-inch hole in tops of cupcakes; discard cupcake pieces. Fill holes with pudding (reserve remaining pudding for another use). Place whipped cream in piping bag fitted with large star tip; pipe whipped cream over filling. Top each cupcake with 1 banana slice.
