Heat frying pan over medium heat.
Place a metal strainer over a large mixing bowl.
Mix flour, sugar, baking powder and salt together in metal strainer and allow mixture to pass through strainer into large mixing bowl.
Mix eggs, milk and cooking oil together in separate bowl.
Pour liquid mixture into dry mixture and stir with large spoon leaving small lumps.
Apply additional cooking oil to frying pan.
Using spoon, scoop batter onto frying pan (about two spoonfuls for each pancake).
When pancakes have bubbles on the top, flip them over and cook the other side. The pancake should be golden brown on each side.
For something interesting, try adding 1 cup fresh or frozen blueberries, chopped apples, chopped bananas and chocolate chips, or raisins and cinnamon to batter after it has been stirred together.
For a more hearty option, try using half all-purpopse flour and half whole wheat flour, or add some ground flax seeds.

Serve pancakes with butter, syrup, jam or strawberries and whip cream.
