     Meteorite Mini Cakes

Ingredients
1 package (about 18 oz.) chocolate cake mix, plus ingredients to prepare mix
2 containers (16 oz. each) vanilla frosting
Red, green, blue and yellow food coloring
1 bag (11 oz.) chocolate chunks
 

Instructions
1) Preheat oven to 350 F. Line 12 standard (2 1/2-inch) muffin cups with paper baking cups.
2) Prepare cake mix according to package directions. Spoon evenly into prepared muffin cups. Bake 20 minutes or until toothpick inserted into centers comes out clean. Cool in pan 10 minutes. Remove to wire rack; cool completely.
3) Trim cupcake edges to form rounded shapes. Microwave frosting in microwavable bowl on low for 30 seconds or until melted. Divide frosting among 4 small bowls. Add food coloring, a few drops at a time, until desired shades are reached. Pour half of each frosting over cupcakes, coating completely. Refrigerate cakes for 20 minutes.
4) Press chocolate chunks into frosting. Reheat remaining frosting on low for 30 seconds or until melted. Coat cupcakes again. Cover and refrigerate until ready to serve.
