     Strawberry Rhubarb Upside down cake

Ingredients
2 tablespoons butter
50g brown sugar
1 cup sliced strawberries
1 cup sliced rhubarb
110g butter
130g brown sugar
1 large egg
160g plain flour
1 teaspoon baking powder
 
quarter teaspoon salt
2 tablespoons Greek yogurt
zest of 1 lemon

Instructions
Preheat oven to 180 Put 2 tablespoons butter in 8 inch cake tin in oven to melt, then coat the sides on the tin. Sprinkle 50g brown sugar into tine and add the sliced fruit.
Cream butter and sugar together 3 minutes. Add the egg and beat for 1 minute. Add the flour, baking powder and salt. Beat on low speed whilst adding the yogurt and lemon zest.
Spoon over the fruit. Bake for 30-35 minutes.
Let cake rest for 10 minutes before turning out.
