Fresh fruit (sliced strawberries, peaches, blueberries, apples, bananas, etc.) (optional)

Instructions
1) Preheat pan or griddle to about medium heat. Do not turn the heat up or else the distrubution of the heat is going to be mainly focused on the center. This may burn the pancakes on contact.
2)In one bowl, sift or evenly distribute flour, granulated sugar, baking powder, baking soda and salt; this prevents the baking soda, baking powder, salt and suager from being concentrated in one part of the flour when mixed with the wet ingredients. Use fork to break up any lumps in the mix.
3) In another bowl, mix egg, milk, oil and vanilla together.
4) Slowly combine milk mix to flour mix. Mix with fork while combining; do not overmix! Stir enough so that flour is mixed in well.
5) Cook pancakes on pan/griddle. Top with butter, syrup, powdered sugar, honey and fruit, if desired.
