1.5 lbs lean ground beef. You can get away with just using 1 lb without altering other ingredients)
1/4 c oatmeal
1/4 c chopped onion and 1/4 c chopped green pepper
1.5 tsp salt
1/4 tsp pepper
1 c tomato juice or ketchup
1 egg, beaten (If you add any more than 1/4 c of onion and green pepper, add another egg)
(For Piquant Sauce) 3 Tbsp brown sugar
(For Piquant Sauce) 1/4 c ketchup
(For Piquant Sauce) 1/4 tsp nutmeg (I use a bit less than that. Be careful, it's flavor is strong)
(For Piquant Sauce) 1 tsp mustard
Instructions
Combine all ingredients. Pack firmly into an ungreased loaf pan.
Bake 350 for 1 hour uncovered. If you cover it, the grease will not reduce.
- While baking, make Piquant sauce by mixing brown sugar, ketchup, nutmeg and mustard in a small bowl.
[Taste test it to make sure you like it. If too much nutmeg is in it, add a bit more of the other three ingredients to counter-act it. If not sweet enough, add more brown sugar.]
After meatloaf has baked for one hour, there will be some grease around the pan. Don't worry about it.
- Brush top with piquant sauce and put back in oven to bake for another 15 minutes.
Let stand for 10 minutes before slicing
***Freezes well. To freeze, after it has cooled completely, cover it with plastic and then cover well with aluminum foil.
