Or - one bag of shredded cole slaw from produce dep.
1/2 head of Broccoli, very finely chopped
5 green onions, finely chopped
1/4 cup butter (you can use less to cut down fat)
1/2 cup sesame seeds
1/2 cup slivered almonds
2 packages Ramen noodles, crushed
Dressing
1 tsp soy sauce
1/4 cup cider or red wine vinegar
1/2 cup sugar
1/2 cup olive oil
Instructions
Mix and store the cabbage, broccoli and green onions overnight to blend flavors.
Saute the seeds, nuts and crushed Ramen noodles in butter until light golden brown. Discard flavor packs from Ramen noodle, or use in another recipe.
Mix the vinegar with the sugar to dissolve sugar. Then mix in soy sauce and olive oil. Keep at room temperature.
Toss the ingredients together in large bowl just before serving. The secret is to keep the three parts separate until just before serving. Recipe can be doubled for large group. Any leftovers will not be as good because the noodles get soggy. This can be used with coarse chopped bok choy and I have also seen it with finely chopped cauliflower in addition, or as a replacement for the broccoli.
