     Sweet Potato Lasagna

Ingredients
2 sweet potatoes
1 red bell pepper
1 orange bell pepper
1/2 cup mushrooms
1/4 cup green onions
3 cups tomato sauce
1 tsp black pepper
1/2 tsp cayenne pepper
1/2 tsp olive oil
 
1 tbsp garlic powder
1/2 cup of water
Handful of spinach leaves

Instructions
Preheat the oven to 350 degrees.
Add everything but the sweet potatoes in a skillet and let simmer for 10 minutes. While the mixture is simmering, peel and slice the sweet potatoes. Be sure not to cut too thin or too thick!
Grease a 9x9 baking pan and begin to layer. First lay down a layer of sweet potatoes, then vegetable sauce, then sweet potatoes, etc. Cover the baking dish with foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for another 15 minutes. Let cool and serve.
