     Zucchini Bread

Ingredients
2 eggs beaten
1 1/3 cup sugar
2 tsps vanilla
3 cups grated fresh zuchinni
2/3 cups melted butter
3 cups self rising flour
1/2 tsp of nutmeg
2 tsps cinnamon
1 cup of chopped walnuts or pecans
 

Instructions
1. Preheat oven to 350. 2. In a large mixing bowl, mix sugar, eggs, vanilla, and butter until smooth. 3. Stir in grated zucchini. 4. Slowly stir in 1 cup of flour at a time until all the flour is used and the mixture is free of flour lumps. 5. Grease two 5X9 loaf pans, or you can use muffin tins. 6. Evenly pour mixture into pans. 7. Cook at 350 for 55 minutes, check at 50 minutes with toothpick. 8. Remove from oven and allow to cool for ten minutes before removing from pan. 9. Slice and Enjoy.
Serving Suggestions
Just eat it, it's yummy! It's good hot or cold out of the frig.
