     Kofta Kebabs with Tzatziki Sauce 4HB

Ingredients
1 lb ground lamb or beef
1 Tablespoon ground coriander
1 teaspoon ground cumin
1 teaspoon cinnamon
1/2 teaspoon allspice
1/4 teaspoon ground ginger
1/4 teaspoon black pepper
Dash of cayenne pepper
2 1/2 cloves minced garlic
 
3 Tablespoons finely minced onion
3 Tablespoons chopped parsley
Salt to taste
1/2 cucumber
1 cup plain greek yogurt
1/4 tbsp lemon juice
1 tbsp chopped mint leaves

Instructions
In a large bowl, put the ground meat, flattened in the bowl, add coriander, cumin, cinnamon, allspice, ginger, black pepper, cayenne pepper, 2 cloves garlic, onion, parsley, and salt. Knead for at least 5 minutes until all is well mixed. Let the kofta rest for 20 to 30 minutes in a cool place to marinate.
Wet your hand with water. Take the kofta and make a big cigar. Put on a long skewer, in the center. Repeat skewering until done. Cook over a charcoal grill about 6 minutes or until done. Or, bake on a baking pan or grate in oven for about 20 minutes at 350 degrees.
To make Tzatziki sauce, peel and chop up the cucumber and put it in a strainer or coffee filter suspended over a cup or bowl to drain. Sprinkle a little salt over it. Let it drain for awhile - at least 10 minutes - then squeeze it down to get as much juice out as possible. Mix with the yogurt and mint, 1/4 tbsp garlic, and 1/4 tbsp lemon juice. Salt and pepper to taste. Put in blender until smooth. Drizzle some olive oil over the top if desired. (You can use dill if you don't have mint. You can also use regular yogurt if you dont have Greek but you have to strain it.)
Yogurt is typically not allowed on a slow-carb diet so get the greek kind (better for you) and use this sauce sparingly.
Serving Suggestions
Serve with vegatables or salad.
