Ingredients
sugar - 3½ tsp caster
lime - juice of ½
fish sauce - ¾ tbsp
garlic - 1 small clove grated
ginger root - ½ tsp grated
red chilli - 1 deseeded and very finely chopped
groundnut oil - 4 tbsp
Instructions
Using a fork, whisk the caster sugar with the lime
to help the sugar dissolve. Add the fish sauce,
garlic, ginger and chilli, then whisk in the oil.
Taste for sweet-salty balance.
Toss this versatile dressing with batons of carrot
and daikon (with basil, mint or coriander) or use it
for eastern salads of duck breast, green beans and
leaves. Use half the chilli for less heat.
