Salad Dressing Honey and preserved-lemon dressing

Category   Salads - Soups - Sidedishes
Sub Category   None
Preptime   10 minutes

Ingredients
preserved lemons - 1 or 2 small plus 1½ tsp juice from the jar
white wine vinegar - 1 tbsp
honey - 1 tbsp runny
mint - leaves from 4 sprigs torn
olive oil - 4 tbsp

Instructions
Remove and discard the flesh from the preserved lemons. Cut the skin into fine slivers, then halve them so that they are not too long. Whisk the white-wine vinegar with 1½ tsp of the preserved lemon juice and the honey. Whisk in the rest of the ingredients, season, and add the lemon slivers. Taste for seasoning and sweet-sour balance.
Sweet, sour and Moroccan, this is just as good with starchy side salads (use it to dress couscous or warm potatoes) as with leafy ones.
