     Brownie Pies

Ingredients
For the Brownie Pies
12 oz. chocolate, chopped
3 Tbs. unsalted butter
2 eggs
2/3 cup sugar
1 tsp. vanilla
1/4 cup flour
1/4 tsp. baking powder
 
For the Caramel Cream
1/2 cup unsalted butter, softened
1 cup powdered sugar
1/8 cup caramel sauce
Pinch of salt

Instructions
Place 7 oz. (a little more than half) of the chocolate and the butter into a small saucepan over medium-low heat. Stir until everything is melted and smooth. Set aside. Meanwhile, in the bowl of a stand mixer, mix the eggs, sugar, and vanilla (using a paddle attachment) until the mixture is pale yellow, fluffy, and smooth. Add the flour, baking powder, and melted chocolate to the egg mixture and mix well. Add the remaining unmelted chocolate bits and mix just until everything is combined. Allow batter to stand for 10 minutes.
Preheat the oven to 350 degrees and prepare a baking pan by lining it with parchment paper. Spoon approximately 2 tablespoons of batter per cookie onto the baking sheet. (No more than 6 cookies per sheet) Bake for 8-10 minutes, or until the cookies puff and crack on top. Allow cookies to cool completely before removing to a wire rack for filling.
For the Caramel Cream Filling Cream the butter in a bowl. Add the powdered sugar, caramel, and salt to the butter and beat until smooth. Spread a spoonful of the filling onto one brownie cookie before topping with another cookie for serving.
