     Flaxseed Breaded Chicken Strips 4HB

Ingredients
2 chicken breasts cut into strips
1-2 cups ground flax seed (golden flax if possible)
oil
2 eggs
spices of your choosing
 

Instructions
Flaxseed is a great breading for low carb diets. It's not super expensive and typically has only a few net carbs per serving (total carbs minus fiber) and is very good for you. It has a slightly bitter nutty flavor. The golden flaxseed is less bitter. Strong spices hide the flavor well but I think it tastes okay. You can cut it with almond or chia flour if you're feeling fancy.
Pound chicken and cut into strips. Dip in egg and then coat in flaxseed and spices. Heat oil in a pan and fry up the chicken strips.
We use chili powder, garlic, and Kick'n Chicken in our flax mixture. It's a little spicy and super tasty!
Serving Suggestions
Serve with a low sugar/low carb dipping sauce. Hot sauces and mayo is allowed on the slow carb diet so try mixing some with srircacha and/or mustard.
