brush a little of the oil in a roasting tin and add the salmon fillets.
in a bowl, mix together the breadcrumbs, lemon zest, herbs and parmesan and sprinkle over the fish. using your hands, press the mixture onto the fish to help it stick. drizzle over the remaining oil.
roat in the oven for 10-12 mins, depending on the thibkness of the fish, and serve with freshly steamed green vegetables.
