     Brussel Sprout Potato Stew

Ingredients
1 lb. brussels sprouts
1.5 lbs potatoes
14 ounces sweet potatoes
1 onion
2 tbsp canola oil
2 tbsp curry
40 ounces vegetable broth
100g carbanossi (Sausage)
Salt, pepper
 

Instructions
Wash and clean the brussel sprouts. Wash and peel the potatoes and sweet potatoes and cut them into small pieces. Peel the onion and dice. Heat the oil in a pot and steam the onion in it. Add the curry and continue to steam. Add brussels sprouts, potatoes, sweet potatoes and vegetable broth. Cook stew at low heat for about 20 minutes. Add the carbanossi 5 minutes before the end. Remove the carbanossi before serving, cut into slices and put it back in the stew. Season with salt and pepper, put it in soup plates and serve.
