     spaghetti with rocket and ricotta

Ingredients
300g (10oz) spaghetti
2 tsp olive oil
1 small onion
1 handful of rocket
1 garlic clove
75g ricotta
125ml dry white wine
salt and pepper to season
 
Instructions
cook the spaghetti in a pan of boiling water until soft.
meanwhile, heat a little oil in a pan and saute the onion until soft. add the rocket and garlic, then season with a little salt and pepper.
add the ricotta and white wine and mix evenly until the ricotta is melted.
mix the cooked spaghetti and mixture together and toss well, then serve.
