Mix first five ingredients together. In another bowl, mix together sugar, oil, eggs and vanilla. Add flour mixture. Mix carrots, coconut, pineapple, and nuts into batter and pour into greased and floured 9 x 13 inch pan. Bake at 350 degrees for 45 minutes or until done. Cool and frost.
