heat oil in skillet over med heat. add cut potatoes. cook until golden brown and tender. transfer into bowl to cool
add sausage and onion to pan with more oil. breaking it up with a spoon until sausage is browned and cooked and onion is tender. add paprika,cumin, oregano , chili powder, salt, and pepper. cook for 1 minute
return potatoes and toss to combine
