     Baked Potato Soup

5 lbs. Russet Potatoes, diced, unpeeled
5 cloves garlic, finely diced
1 yellow onion, chopped
64 oz. chicken broth
8 oz. cream cheese
Bacon, sour cream, chives and/or shredded cheese for garnish

Combine potatoes, garlic, onion and broth in crock pot. Cook on low for 8 hours or on high for 5 hours. Puree soup in food processor with cream cheese. Served warm topped with bacon, sour cream, shredded cheese and chives.
