I slice the onions & caramelize them in olive oil.
While this is cooking, I make the guacamole by
mashing together the avocado, a little chopped
onion, sometime tomato, the juice of 1/2 the lime,
and salt to taste. I put Saran over it making
sure it touches the top of the guac & set it
aside. When the onions are close to being ready,
I season the fish (usually garlic salt or adobo
seasoning & pepper) & put it on a grill pan. When
that is cooked through, I flake it on a plate. I
heat up the corn tortillas in a dry nonstick
skillet & keep them warm under a kitchen towel,
assemble & enjoy!!
