     Tofu Broccoli Stir-fry

Ingredients
1 small onion, sliced
2 cloves garlic, chopped
1 tbsp toasted sesame oil
1 package extra firm organic tofu
1 cup peas (fresh or frozen)
1 bunch broccoli
3 cups brown rice
crushed red pepper (optional)
soy sauce topping to taste
 

Instructions
I start off making the rice since it takes the longest. I have made this with faro and it is just as good, but PQ prefers it with brown rice. In my toaster oven I put the tofu with juice in a baking dish and bake for about 30-40 minutes at 350. While rice is cooking and tofu baking I wash/ cut up broccoli and throw it in the steamer for 5 minutes ( I like to steam veggies on the raw side to maintain nutrients). You can also blanch, but I prefer steaming them. In a skillet or frying pan I saute onion strips and chopped garlic in toasted sesame oil until translucent. Then I add frozen peas and steamed broccoli. Add red pepper if you like. Once tofu is somewhat browned on the sides cut into cubes and add to frying pan. Once rice is done add a cup at a time ( i usually make 3 cups but only use about half so i have some left over. Add soy sauce on top, citrus ponzu sauce is good too. I have sometimes added scrambled egg, too.
Serving Suggestions
I sometimes add chicken (I marinate Chix breast in some soy sauce, salt/pepper/ lemon, sesame oil) for a half hour or so.
