Apple Cider Pound Cake with Apple Cider Glaze

Category   Desserts - Breads
Sub Category   None

Ingredients
For the cake-
3 cups sugar
1 1/2 cups butter, softened
6 eggs
3 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

1/8 teaspoon ground cloves
1 cup apple cider
1 teaspoon vanilla
For the glaze-
1 cup apple cider
1/2 - 3/4 cup powdered sugar
2 tablespoons butter
dash of salt

Instructions
Preheat oven to 325 degrees. Grease a bundt pan. In the bowl of your stand mixer, beat together the sugar and butter until light and fluffy. Beat in the eggs, one at a time, until well combined. In a medium bowl, combine the dry ingredients. Combine the cider and vanilla. Add dry ingredients alternately with the cider and mix until well blended. Pour into the greased bundt pan and bake for 70 minutes or until a toothpick inserted in the center comes out clean. Cool for 20 minutes in the pan before removing to a cake stand or plate. Cool completely before icing. To make the glaze- Bring the cider to a boil over medium heat, reduce heat to low, and simmer for 10 minutes or until reduced by half. Stir in the butter, cinnamon, salt, and 1/2 cup of powdered sugar until well combined. Add remaining powdered sugar to thicken the glaze, if desired.
