|
in a small saucepan, cover the potatoes with water and bring to the boil. cook for 5- mins. drain and cool, then grate.

in a bowl, combine the eggs and flour. add the cod, grated potato, chives and lemon juice. season with pepper; mix well.

|
heat the oil in a large frying pan over a high heat. drop 2 tbsp of the mixture into the hot oil, flattenng slightly. cook for 2mins each side, until cooked through and crispy. you may need to do this in batches.

|
|
drain on kitchen paper and serve accompanied by the soft cheese and rocket leaves.
