     Easy Pork BBQ Potato Skins

Ingredients
8 whole small Russet potatoes
4 tablespoons extra light olive oil
1 cup diced bacon
1 package Oscar Mayer Carving Board Hickory Smoked Pulled Pork
1/3 cup Stubb’s Original barbecue sauce
2 tablespoons butter, melted
Coarse sea salt
2 cups shredded mild cheddar cheese
2 tablespoons diced green onions
 
1/2 cup sour cream

Instructions
Preheat oven to 400 degree F. Wash and dry potatoes with a paper towel. Rub each potato with the olive oil and space evenly on a baking sheet. Bake for 45 mins – 1 hour, until the skin is crispy and potatoes are tender. Remove from oven and set aside to cool. Fry bacon until crispy and set aside to cool. Add the pork to the skillet with bacon grease over low. Add bbq sauce and heat until warm. Cut potatoes in half lengthwise. Use a spoon to scoop the potato insides out, leaving some along the skin for support. Brush both sides of the potatoes with the melted butter, sprinkle with sea salt and place skin side up on the baking sheet and bake for 10 minutes. Remove from oven. Sprinkle the insides of the potato skins with cheese, bacon and pork bbq. Bake for an additional 5 – 10 minutes, until cheese is melted. Serve with sour cream and green onions.
