     Zuchhini Soup

Ingredients
6 medium sized zucchini
2 medium potatoes
1/2 onion
1 garlic clove
olive oil
1 chopped tomato or tomato sauce
fresh oregano and basil
water
3 eggs
 
1/4 cup Parmesan cheese

Instructions
Bring a pot to boil. I would parboil potatoes about 10 minutes. In a big pot drizzle olive oil. saute onion and garlic. Add zucchini. I usually slice it lengthwise in quarters and cut 1 inch chunks from there. After zucchini has softened add parboiled potato. After I saute veggies together for a few minutes I add a few sprigs each of oregano and basil ( fresh is best) salt and pepper and tomatoes ( if sauce just a few tablespoons). And then fill the pot up with water until just covering veggies. Depending on the size pot you have, the veggies should fill it almost all the way up before adding the water. Bring to boil, then down to medium. Let cook for a half hour. After soup is done, crack two or three eggs into soup and whip with a fork while doing so. Add 1/4 cup Parmesan cheese. Stir together and it is ready to serve.
