Ingredients
a large bag of CORN CHIPS
grated CHEESE (cheddar, jack, colby, medican trio, or mexican goat cheese to get fancy)
one ONION chopped or diced (or 1/2 cup chopped green onions or 1/4 cup dried if you are feeling rea
large can of RED enchilada sauce
ONE SMALL JAR of SALSA
 

Instructions
Preheat oven to 350. Spray a baking pan (9X13) and layer about 1/2 - 1/3 of the chips, cheese, onions and sauce (2- 3 times), then pour the reaminder of the can of enchilada sauce over all of it - cover the top with more cheese. Cover with tin foil and bake for about 20 minutes. Uncover and continue baking for another 10 minutes. My mother smashes the chips, mixes everything in a bowl then bakes - good also.
Can modify the use of the essential ingredients and follow the basic prep instructions to make - CHICKEN CHALUPA - INGREDIENTS - a large bag of CORN CHIPS at least a pound of grated CHEESE (cheddar, jack, colby, or mexican trio), one ONION chopped or diced (or dried if you are feeling really lazy), a can of GREEN CHILIES (whole then chopped - or 2 small cans of diced, but not quite as good), a large can of GREEN enchilada sauce, 16 oz of SOUR CREAM or PLAIN YOGURT, and about a pound of cooked-deboned chicken (have used rotissery, canned, backed chicken breast lunch meat, or cooked up chicken tender strips or breasts - chopped). Some people like to use a large can (family size) of mushroom soup instead of sour cream or plain yogurt). Layer and bake.
EZ TAMALE PIE - INGREDIENTS - YEP - YOU GUESSED IT -a large bag of CORN CHIPS at least a pound of grated CHEESE (cheddar, jack, colby, or mexican trio), one ONION CHOPPED or diced, a LARGE can of CHILLI soup with or without beans (or a large can of tomato sauce, salt, pepper, chili powder, and garlic to taste), 6 eggs pre-beaten, 1 cup water or milk, CHOPPED or diced GREEN CHILIES and/or 1 lb browned GROUND BEEF or CHICKEN -OPTIONAL. Layer and bake.
REMEBER TO ERR ON THE WET SIDE - TOO GOEY, TOO MOIST is always better than too dry. Just throw an extra 1/4- 1/2 cup of water over everything f the chips are not fully covered.
Serving Suggestions
Additional Salsa, guacamole, sour cream or plain yogart are great for garnishments
