     Herb Pilaf

Ingredients
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1/2 tsp dried thyme
2 tbsp light butter
3 cups cooked brown rice, wild rice, barley or bulgur wheat
1/4 tsp salt
 

Instructions
Coat a large nonstick skillet with nonstick cooking spray and add onion, celery, and thyme. Place the skillet over medium=high heat, cover and cook, stirring frequently, for several minutes or until the vegetables are tender. Add a little water or broth if the skillet becomes too dry.
Reduce the heat to medium, add the butter, and stir until it melts. Add the grain and salt to the skillet mixture and cook and stir for a minute or two or until the mixture is heated through.
