     Crispy Skillet Potatoes

Ingredients
2 T extra virgin olive oil
4 small red potatoes, cut into thin wedges
1/2 C chopped onion
1/2 t salt
2 T lemon pepper
Chopped Fresh Parsley (optional)
 

Instructions
1- Heat oil in large skille over medium heat. Add potatoes, onion, lemon pepper and salt; stir to coat. Cover and cook 25-30 minutes or until potatoes are tender and browned, turning occasionally.
2- Sprinkle with parsley just before serving.
