Peel plantain and then cut into thick slices (probably almost 2 inches). Heat vegetable oil in a pan and fry plantains, flip once crispy. Remove from pan when both sides are slightly crisp but keep heat on. Use a hard plate to squish the plantains and then add them back to pan to cook again. Allow to get crispy on both sides again before removing. Add lemon juice, salt to taste. Can serve with a good salsa or guacamole.
