1 Package frozen spinach, thawed and drained (anywhere from 10-16oz package works)
1 16 oz container of cottage cheese
1 cup shreaded cheddar cheese (I like sharp)
1/4 cup butter, cut into small pieces
1 small onion, died finely (optional, Lyndsay's preference)
Instructions
Preheat oven to 350 degrees
Mix all ingredients. Pour into 8x8 baking pan, or large pie pan, or round baking casserole bowl(like the dip bowl I use). Bake for 50min-1 hour until slightly golden brown around the edges.
