     Skillet Succotash

Ingredients
1 t canola oil
1 C diced onion
1/2 C diced green bell pepper
1/2 C diced celery
1/2 t paprika
3/4 C frozen white or yellow corn
3/4 C frozen lima beans
1/2 C canned diced tomatoes
1 t dried parsley flakes OR 1 T chopped fresh parsley
 
salt
pepper

Instructions
1- Heat oil in large skillet over medium heat. Add onion, bell pepper and celery; cook and stir 5 minutes or until onion is translucent and pepper and celery are crisp-tender. Stir in paprika.
2- Add corn, lima beans and tomatoes. Reduce heat. Cover and simmer 20 minutes or until beans are tender. Stir in parsley, salt, and black pepper just before serving.
For additional flavor, add 1 clove minced garlic and 1 bay leaf. Remove and discard bay leaf before serving.
