15 1/2 oz can chickpeas, rinsed and drained
|
|
12 oz tomatoes with green chilis
|
|
1/2 C chopped onion
|
|
2 cloves garlic, minced
|
|
1 T extra Virgin Olive Oil
|
|
1 T ground cumin
|
|
3/4 C veggie broth
|
|
1 T ground Coriander
|
|
1/2 T ground ginger
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

|

|
|

Instructions |
|
|
1- Saute garlic and onion in olive oil over medium heat for about
two minutes.
|
|
|
2- Stir in cumin, ginger, and coriander. Cook until onion is tender.
|
|
|
3- Add chickpeas, vegetable broth and tomatoes with juice and
bring to a boil.
|
|
|
4- Cover and simmer for ten minutes.
|
