     Chicken and Spinach Lasagna

Ingredients
1 lb ground chicken
1 medium onion, chopped
2 cloves garlic, minced
1 1/4 C Cottage Cheese
10 oz frozen spinach
dash salt
dash pepper
1/2 C extra virgin olive oil
1/2 C flour
 
14.5 oz chicken broth
1 1/2 C milk
1/2 t nutmeg
1 C parmasean cheese
8 oz no boil lasagna noodles
2 1/2 C shredded mozzerella cheese

Instructions
1- Heat oven to 350 degrees. Coat 13x9 pan with non-stick spray 2- Saute chicken, onion, and garlic 10 minutes in coated pan. Remove from heat and stir in spinach and cottage cheese. Season with salt and pepper.
3- Heat oil in pan. Stir in flour. Cook 2 minutes. Add broth and 1 C milk. Bring to boil. Remove from heat. Add nutmeg and parmesean cheese. Thin with milk.
4- Layer as follows- Sauce, noodle, sauce, 1/4 mozzerella, 1/3 chicken (repeat 3 times) noodle, sauce
5- Bake 35 minutes covered, remove cover and continue baking 20 minutes
