     Crock-Pot Pot Roast

Ingredients
4 lbs. chuck roast
salt and pepper to taste
1 packet dry onion soup mix
1 cup water
3 carrots, chopped
1 onion, chopped
3 potatoes, peeled and cubed
1 stalk celery, chopped
 

Instructions
Take chuck roast and season with salt and pepper to taste. Brown on all sides in large skillet over high heat. Place in Crock-pot, add the soup mix, water, carrots, onion, potatoes and celery. Cover and cook on low setting for 8-10 hours. When you take out roast, mix some flour and water...stir into Crock-pot for a rustic gravy. I just eyeball it - start with 1/3 cup of flour and enough cold water to make a non-lumpy paste and whisk into the liquids - yum!
Serving Suggestions
Side vegetable and mashed/baked potatoes with that yum rustic gravy!
