     Mango Sesame Noodle Salad

Ingredients
2 Tbls toasted sesame seed
12 to 14 oz soba noodles or whole grain linguine
3 Tbls canola or peanut oil
1 Tbls sesame oil
6 Tbls rice vinegar
3 Tbls lime juice
3 Tbls honey or real maple syrup
1/2 tsp salt
1/8 tsp pepper
 
Pinch of red pepper flakes (optional)
4 green onions, thinly sliced
2 carrots, peeled and grated
2 mangos, peeled and diced
1/4 c chopped cilantro or parsley
1/2 c. chopped dry roasted peanuts
1 c. shelled edamame

Instructions
Cook noodles according to package directions and toss with one tablespoon of oil. Set aside.
In large bowl, combine remaining canola oil with the next 7 ingredients. Whisk to combine well. Add the noodles, green onions, carrots, mangos, cilantro, peanuts, and edamame. Toss to combine. Chill for 2 hours, stirring occasionally to evenly distribute flavors.
Serve well-chilled. Sprinkle with sesame seeds just prior to serving. For a complete meal, top with grilled shrimp, chicken, or pork.
