For Chipotle Mayo- 1-1/2 tsp chipotles in adobo sauce
3/4 cup mayo
For Burgers-
1-1/2 lbs lean ground beef
2 tbsp Tex-Mex chili seasoning
2 tsps chipotles in adobo sauce
1/4 cup beer of choice
salt and pepper
2 slices pepper jack cheese
hamburger buns, toasted
Lettuce, tomatoes, onions
Sliced avocado, opt
Butter for basting
Instructions
For the chipotle mayo- remove peppers from can.
Carefully split open and scrape out seeds. Finely
chop peppers; set aside. In a small bowl, stir
together 1-1/2 tsp chopped chipotle peppers and
mayo; et aside covered in fridge.
For burgers- In a mixing bowl, stir to combine
ground beef, chili seasoning, 2 tsp chopped
chipotles, and beer. Wet your hands to prevent
sticking and shape into patties slightly larger than
the buns.
Season burgers with salt and pepper and cook 4-5 min
per side for medium. Baste with butter if desired.
Serve with chipotle mayo.
