     Poblano Peppers with Yellow Rice and Beans

Ingredients
8 oz package yellow rice
1 tablespoon canola oil
1½ cups fresh corn kernels
15 oz can black beans, drained and rinsed
16 oz can refried beans
6 large poblano peppers, halved and seeded
2 cups shredded mozzarella cheese
 

Instructions
Preheat oven to 400 degrees. Prepare rice according to package directions. Heat oil in a large skillet over medium-high heat. Add corn and black beans; saute 3 minutes. Stir in rice and refried beans; saute 1 minute. Place peppers on a rimmed baking sheet; divide rice mixture evenly among pepper halves. Sprinkle evenly with cheese; bake 25 minutes or until cheese is browned and peppers are tender.
