     Lime & Tomatillo Black Bean Salad

Ingredients
2 medium tomatillos, papery skin removed and finely chopped
1/2 medium poblano pepper, seeded and finely chopped
2 medium plum tomated, finely chopped
14 oz can black beans, rinsed and drained
a few cilantro leaves
1 tsp lime zest
1 ripe medium avocado, peeled, and diced
1 tbsp fresh lime juice
1 tbsp canola oil
 
6 medium romaine leaves

Instructions
Combine in a medium bowl tomatillos, poblano pepper, tomatoes, beans, cilantro and zest.
When ready to serve, add remaining ingredients and stir gently, yet thoroughly, until well blended. Serve on lettuce leaves.
Serving Suggestions
Can also serve as an appetizer on peeled cucumber rounds
