     Museum Carrot Cake w/ Cream Cheese Frosting

Ingredients
1 1/2 cups vegetable oil
2 cups sugar
3 eggs
2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
2 teaspoons vanilla
1 teaspoon salt
2 cups carrots, shredded
 
1 cup walnuts, chopped
1/2 cup crushed pineapple
cream cheese frosting

Instructions
Combine all ingredients, mix until well blended. Pour into greased or sprayed baking pans. Bake at 350 about 1 hour—cake will spring back when touched. Cover cooled cake with cream cheese frosting.
