     Zuppa Tuscana - 4HB

Ingredients
10 cups water
6 chicken bullion cubes
1 1/2 tsp crushed red pepper
2 cloves garlic
1 bag cauliflower
1 lbs ground sausage
1 large white onion
1 bunch fresh kale
1 cup heavy cream
 
6 tbs bacon bits

Instructions
We sub potatoes out for cauliflower in this Olive Garden copycat recipe.
In a large pot, heat water, bullion, pepper, and garlic.
In skillet, saute sausage and onion until browned. Add sausage, onion, cauliflower and kale to pot and simmer 20-30 minutes.
Add cream and bacon bits and simmer an additional 10 minutes or until cauliflower is tender.
