     CACIO E PEPE

Ingredients
8 oz. spaghetti
4 TBS. butter
1 TBS. fresh cracked black pepper
3/4 c. grated parmesan cheese
 

Instructions
Bring a pot of salted water to a boil. Add the pasta and cook to al dente.
While the pasta cooks, melt butter in a large saute pan over medium heat. Add the pepper. When the butter begins to bubble, turn off the flame and remove from heat.
When the pasta is ready, drain, reserving 3 TBS. of water. Add water and noodles to the saute pan.
Cook over medium heat until the liquid bubbles and thickens, tossing the pasta as needed. Remove from heat and add the parmesan, tossing vigorously, until all ingredients are incorporated into a creamy sauce. Garnish with more parmesan and pepper and serve immediately.
Serving Suggestions
Could be used for main meal or a side in place of buttered noodles.
