Ingredients
4 bushels of Johnson Apples
3 bushels of Golden Delicious Apples
3 - 15 lb bags of sugar
3 gallons apple cider
1 gallon of water, if needed
6 cinnamon sticks
1 Tablespoon ground cloves
7 pices of star of anise
1 bag of red hots
 
1 copper kettle and stirring paddle

Instructions
Peel and slice apples the day before.
5-30 am - Start fire Add cider and water. When boiling add other ingredients, stir constantly so it does not burn. Cook for at least 10 hours.
Test by putting a drop of apple butter on a plate to see if there is any excess water that runs when plate is tilted. When no water runs from sauce then it is ready for canning.
