     Greek Honey-Lemon Pork Chops

Ingredients
4 bone-in rib chops, cut 3/4 inch thick
1/4 cup honey
4 tsp finely shredded lemon peel
1/4 cup lemon juice
2 tbsp snipped fresh mint or 1 tsp dried mint, crushed
1 tbsp olive oil
1 tsp salt
1/2 tsp cayenne pepper
 

Instructions
Trim fat from chops. Place chops in a large resealable plastic bag set in a shallow dish. For marinade, in a small bowl stir together honey, lemon peel, lemon juice, mint, oil, salt, and cayenne pepper. Pour over chops in bag. Seal bag; turn to coat chops. Marinate in the refrigerator for 4 to 24 hours, turning bag occasionally. Drain chops, discarding marinade.
For a charcoal or gas grill, grill chops on the rack of a covered grill directly over medium heat for 11 to 13 minutes or until chops are slightly pink in center (160 degrees F), turning once halfway through grilling time.
Serving Suggestions
These chops are delicious with roasted potatoes, potato salad, green salad, or fresh corn on the cob.
