1 10-15 oz. can diced tomatoes (or Roitelle for more spice!)
1 10-15 oz. can refried beans
2-4 cups of Shredded Mexican cheese mix
1 package of tortillas (can use low carb)
Optional: 1 small can of diced green chiles
Optional: A tablespoon of chopped jalapeno
Instructions
In a large skillet, cook the ground beef, peppers and onion (and any of your optional items!) over medium heat until meat is no longer pink; drain. (NOTE: If using sprinkles, cook the other items before adding the sprinkles and just warm them up!)
Add water and taco seasoning; bring to a boil. Reduce heat, simmer, uncovered for 2 minutes.
Stir in the black beans and tomatoes; simmer uncovered for 10 minutes.
Place 2 tortillas in a greased 13x9x2 pan. Spread with half the refried beans and half of the beef mixture.
Sprinkle with about 1 cup cheese (or a little more, if you are using the larger amount of cheese).
Repeat layer.
Top with remaining tortillas and cheese.
Cover and bake at 350 for 25 - 30 minutes or until heated through and cheese is melted.
