     Basque Tossed Salad

Ingredients
4 ripe tomatoes, coarsley chopped
1 medium sized red bell pepper, diced
2 medium sized cucumbers, peeled, seeded, coarsely chopped
1./2 medium sized Spanish or red onion, chopped
1/4 tsp dried oregano
1/2 c drained pimento-stuffed green olives, chopped
salt and freshly ground pepper to tasts
3/4 cup pure Spanish olive oil (it matters that you use Spanish - Goya brand is spanish)
Juice of 2 lemons
 
2 large eggs, hard boiled and chopped
6 large radishes, quartered
2 TBSP minced fresh parsley

Instructions
In a large bowl, combine the tomatoes, bell pepper, cucumbers, onion, oregano, olives, salt and pepper. Toss with the oil (you may not want to use all of it) and lemon juice. I sometime use limes instead
Serve on a large platter, garnish with eggs, radishes and parsley
It only saves for about 2 days so cut in half if you don't have a lot of people.
