     pepper and onion melts

Ingredients
2 large red or yellow peppers
1 red onion
2 tsp olive oil
4 thick slices wholemeal bread
125g ball mozzarella cheese
ground pepper
salad to serve
 

Instructions
preheat the grill, arrange the peppers on a baking tray with the red onion. sprinkle with olive oil, then grill for about 6-8 mins, until soft and lightly browned.
toast the slices of bread and share the peppers and onion between them.
arrange the mozzarella cheese on top, then return to the grill for 1-2 mins until the cheese begins to melt.
sprinle with dried rosemary, basil or mixed dried herbs before serving.
Serving Suggestions
serve with salad of your choice
