     Hot Chicken Salad

Ingredients
2 cups chicken, cooked and cubed
1 cup celery, diced
1 cup cooked rice
3/4 cup mayonnaise (low fat is fine too)
1 can slivered mushrooms
1 tsp. onion salt
1 tsp. lemon juice
1 tsp. salt
1 can cream of chicken soup (never tried it with low fat soup)
 
1 can sliced water chestnuts
TOPPING:
1/4 lb. butter, melted
1/2 cup slivered almonds
1 cup crushed ritz crackers

Instructions
Mix the first 10 ingredients together and place in a greased casserole dish.
Mix the melted butter, the almonds and the ritz crackers together. Spread over the top of the casserole.
Base at 350 degrees for 35 minutes.
Can be prepared the day before.
