     Pork Sirloin with Mushrooms and Onion

Ingredients
1 French bread baguette, halved lengthwise
2 tablespoons butter, divided
1½ lb pork sirloin, cut into ¾ inch cubes
¾ teaspoon salt
¾ teaspoon pepper
1½ cups chopped onion
8 oz sliced button mushrooms
2 tablespoons sliced garlic
28 oz can whole tomatoes
 
8 oz package shredded mozzarella cheese

Instructions
Preheat broiler. Place bread on a baking sheet; broil 1 minute or until lightly browned. Melt 1 tablespoon butter in a large skillet over medium high heat. Add pork, salt and pepper to pan; cook 3 minutes or until browned on all sides, stirring occasionally. Remove pork from pan; set aside. Add remaining 1 tablespoon butter, onion and mushrooms to pan; cook 6 minutes or until mushrooms are tender. Stir in garlic; cook 1 minute. Stir in tomatoes; bring to a boil. Reduce heat and simmer 5 minutes, breaking up tomatoes with a fork. Stir in pork; cook 1 minute or until tomato mixture is thickened. Divide pork mixture evenly among bread; sprinkle with cheese. Broil 1 minute or until cheese is melted; cut into 12 pieces.
